We had a nice Easter.
For those of you who don't know, I am very much un-religious, but I still enjoy Easter as a celebration of spring, renewal, fertility, etc. Plus I like bunnies and chocolate.
This Easter was nice since we had Ryan's relatives visiting and it was a lovely sunny Spring day. I made dinner - ham, roasted pineapple, roasted asparagus, mashed potatoes (with half and half yum) and rolls. The asparagus was particularly good (I also roasted a few green onions for myself). I will never eat asparagus any other way again.
Roasted asparagus and green onions
1-2 bunches of asparagus, trimmed of their tough bases
Juice of 1-2 ripe lemons
1T olive oil
kosher salt
fresh ground black pepper
1 bunch of spring (green) onions, trimmed of roots and cut to the same length as the asparagus
Instructions - Place the veggies on a baking sheet, coat liberally with olive oil, salt, pepper, and lemon juice. Roast at 400 degrees F for 20 minutes (middle rack) without disturbing the vegetables. Viola! DELISH. I ate the leftovers cold and they were possibly even better that way.
The pineapple was also delightful roasted with butter. It was very sweet fresh pineapple and needed no additional sugar.
