Healthy veggie packed chicken dish

This was a pretty tasty recipe:

First I made some fresh salsa

Salsa
4 ripe tomatoes

2 jalepenos
1/2c roasted green chile
3/4c cilantro
juice of 2 limes
1 clove fresh garlic
salt to taste

Use a food processor to combine to your desired consistency


Then I needed something to put this delicious salsa on:

Chicken and veggies

3 chicken breasts chopped into bite size pieces
2 zucchini sliced relatively thick
1/2 can kidney beans (rinsed)
2c baby spinach
fresh corn cut from 4 ears of corn
juice of 2 limes
1T olive oil
salt and pepper to taste

In a LARGE skillet sautee chicken on medium until done. Remove to a plate and lay zucchini slices into pan. Brown lightly on both sides, add corn, salt and pepper. Cook until corn is lightly browned as well. Add back chicken, baby spinach, kidney beans and lime juice. Cook until warmed through. Serve chicken and veggies over brown rice, cooked barley, or alone in a bowl drenched in salsa. Add cheese or sour cream if desired.

This is a VERY healthy dish and extremely tasty when you are craving veggies like I have been. It also made me feel much less guilty about the chocolate sheet cake I made for dessert!
